Happy Pie Day everyone! I thought at on this most auspicious of days, I thought it would be a great day to use some left overs from last night’s Crock Pot Ranch Chicken. This is one of my semi-homemade meals. It was quick and easy to make after work.
Ingredients
- Leftovers turned into potpie filling. (Chicken, potatoes, carrots, corn)
- 1 pack Crescent rolls
- 1 egg
To start, I took my leftovers and cut up the chicken and the potatoes into smaller cubes. Next, I took crescent rolls 2 at a time, and I smushed (that’s a technical term right?) the perforated edged together making four rectangles.
I put the dough in four of the muffin tins. The I filled each of the dough with two scoops of the chicken and veggies mixture.
Once all four were filled, I took the over hanging sides of the dough and covered the filling, making sure to cover the sides. Once covered, I beat an egg and used it to cover the top of each pie.
I popped them in the oven that was heated to 400 degrees and cooked them for 25 minutes.
While my potpies were cooking, I was getting my ingredients for dessert, a rustic apple pie.
When I took them out, they were nice and golden brown. I dug in. these little puppies are delicious! I’ll even have two to take to for lunch tomorrow
